MARTHA STEWART: Making your own favors for a wedding is a big undertaking. If you want this task to be enjoyable, instead of something that adds stress, plan ahead to give yourself enough time – — and ask bridesmaids or other members of the wedding party for help.
The simplest homemade favors are those that can be packaged days or even weeks ahead of the wedding day, such as handmade soaps or wrapped candies. That’s not to say that you shouldn’t make petits fours or groom’s cake for favors. You can do this if you put together as much of the packaging as possible in advance. For example, you can make the labels, assemble the boxes and cut the ribbon. Then all you’ll have to do at the last minute is add your fresh-baked favors and seal the boxes.
With special attention given to presentation, even the most basic of favors can be festive and luxurious. Set up a favor table and display favors beautifully, so that guests can help themselves as they pass by.
One idea is to fill bowls with glassine envelopes of loose tea, sorted by variety (Earl Grey, rose hip, jasmine, lemon and green is a nice assortment), adorned with flower garlands and accompanied by handwritten labels. Or package tiny bars of fancy soap in wool felt pouches that match your color scheme; finish these with a ribbon and a fresh blossom or sprig of greenery.
Another possibility is to prepare flower bulbs for each of your guests: Fill glasses or pots 3 inches tall by 3 inches wide with about 20 pebbles and a flower bulb. Package each in a transparent cellophane bag that will show off the new life contained inside. Have the forcing instructions made into a rubber stamp, and stamp them onto a tag slipped into each bag.
Mason jars filled with rosemary-infused salt make unforgettable favors (rosemary is the herb for remembrance).
Preparing infused salt is easy and inexpensive: In a large, high- sided saute pan, combine one 3-pound box of kosher salt and two bunches of fresh rosemary. Place over medium heat, and warm through, about 10 minutes. Transfer this mixture to a container, and let cool 5 minutes, uncovered, then cover with an airtight lid. Let salt stand at least overnight.
When you’re ready to decant the salt into gift containers, discard the rosemary. Fill desired containers with salt, and garnish tops and sides with fresh sprigs of rosemary; seal containers. This recipe yields about 8 cups of infused salt, which can be used in place of unseasoned salt in savory recipes — and is especially nice with potatoes and chicken.
Homemade chutney can also make a charming and thoughtful favor. Chutneys are nothing more than tangy mixtures of fruit and spices, but they make flavorful accompaniments for main dishes — especially mellow roasted meat or poultry. Print tags for jars of your favorite chutney, with the initials of the bride and groom and the date of the wedding on one side and the keeping instructions (most can be kept refrigerated for three to four weeks) and suggested uses on the back. Keep the favors refrigerated until they are distributed.
